It can be used for making flour and it creates a speckled brown color when milled. Absorbs liquid faster rate than medium or coarse grains. Unbleached flour which is prepared naturally for consumption and contains more protein than chemically treated flour.
Unbleached Bread-Making Wheat Flour contains more protein than rice, wheat, millet and corn. It is high in amino acids namely lysine and arginine, where it is deficient in major cereal crops. .
