Its history is closely linked to the family tradition of the Bichot family, which has its roots in Burgundy since 1350. However it was not until the early 1990s that the company began to take notice of international markets, and in 1937, the Maison became the official supplier of the Swedish court. This heritage has been passed down from father to son over the years and since 1966 Alberic Bichot (sixth generation of the family) has been running the business. Albert Bichota's Chablis is made from Chardonnay grapes coming from different parcels covering a total area of 40 hectares. The vines here benefit from Kimmeridge clay-limestone soils, which give this cuvée exceptional complexity and structure. Fermentation takes place in stainless steel vats, as well as refining, which lasts 10 months, on fine yeasts. This Chablis has a bright and crystalline light yellow color with slight greenish reflections. The aroma shows citrus and white floral aromas with mineral tones typical of Chablis. On the palate, the wine is lively and lean, with great freshness and notes of almonds and minerals that open up in a long and persistent finish. It's great as an aperitif, but thanks to its strong minerality, it's ideal with fish and seafood, as well as with sushi.
