At the origin of the greatest red wines and making Burgundy world-famous, Pinot Noir is the ambassador of the terroir. He brilliantly transcribes all the specificities and nuances of the terroir through each of the vintages. Each plot of vines, growing on brown soils on Jurassic limestone hillsides, benefits from healthy and sustainable viticulture applying the principles of organic farming. The soils provide the vines with all the nutrients they need. After manual harvesting, vinification is carried out in a minimally interventionist manner. The berries are fermented for between 20 and 28 days in thermoregulated conical oak vats. Finally, the wine is aged in oak barrels, 20 to 30% of which are new, for approximately 14 to 16 months.
The nose is marked by intense scents of undergrowth, red fruits, and gingerbread. On the palate, a harmonious balance is created, supported with woody notes, leading to a persistent and aromatic finish.
