The grapes are cared for throughout the year so that in the harvest we find the balance between maturity and acidity. During fermentation, the must is in contact with the skins, then it is separated and placed in another tank with yeasts at a controlled temperature. During the process,
the skins are once again in contact with the wine to favour the extraction of flavonoids and the oxygenation of the yeast, so that the residual sugar completely disappears. After the first fermentation, the wine finishes refining on the lees for malolactic fermentation. Serve at a temperature: between 12 and 16 degrees.
