The Lajus estate, which is composed of a small sugar refinery and a water mill, was built in 1670 in Le Carbet. It was not until 1920, however, that the new owner, Jacques Bally, began producing rum here using a column still he created himself. In 1924, he became the first person to age his rums in casks. Now produced at the Saint-James distillery, Bally is considered one of Martinique’s most traditional rums and is also AOC certified. A real land of contrasts, this version invites the taster to pick up their pilgrim’s staff and set off on a journey of discovery. Willing pilgrims will encounter a particularly colourful palette of flavours and aromas that never loses sight of its goal to maintain incredible unity from beginning to end.

Bally 2002 is fresh and fruity. This is an eau-de-vie characterised by woody notes of cinnamon, vanilla and mocha.
