Launched for the first time in 2005, The Spice Tree returned to the forefront of the scene in September 2009 after more than 3 years of absence. Though the malts used mainly come from the north Highlands and are aged for around 10 years.
The result of ageing in first- and second-fill American oak casks, The Spice Tree is aged a second time in barrels mounted with heavily-toasted heads made from hundred-year-old Vosges French oak. Style: Spicy, rich. Nose: Rich. Grains and ripe fruit.
Appearance : old gold.
Nose : rich and deep. Notes of cereal and ripe fruit (apple, pear). A succession of spice (cinnamon, nutmeg), dried fruit (almond, apricot) and candied citrus fruit (grapefruit, lemon) enveloped in noble wood and beeswax.
Palate : balanced, enveloping. Its fruity (mirabelle plum, plum) sweetness is tangible. Forgotten, the relative dryness of the nose, the bitterness of the malted barley, reappears. But, apart from bringing a touch of green, it has almost no real influence. Vanilla
Overall : long, firm. The spices (more cloves) melt fully into fine notes of oak, vanilla and fresh walnut. Candied, the citrus fruit become much fresher and juicier. Punctuated by translucent floral (lime blossom) and herbaceous (mint) notes.
