Richly perfumed, spicy bouquet, dark colour. This wine has good mouth-filling complexity, fruit and suppleness. Fruity cherries and plums mingle with soft tannins, creating a broad finish. The wine is sourced from four vineyards in Marlborough's Wairau Valley, each bringing all its own character. The 'home block' grapes, allocated from the Renvick area, consistently provide rich, dark characters that bring great depth to the wine. And the 'Twin Valley' grapes, allocated from the cooler Fairham Road area, provide the palate backbone that gives the lingering finesse we seek. The 'Ballot Block' grapes from the Brancott area, which is also the newest vineyard, gave a combination of red fruit and cherries, and the 'Byrne Vineyard' this year gave a clean delicacy with red fruit elements rather than slight black fruit elements. The grapes are destemmed and brought to the winery, where they are fermented in small barrels at low temperatures, allowing soft tannins and pigment to be extracted during the fermentation, rather than later in the juice with the rough alcohol. As the grapes are fermented, the indigenous yeasts bring a wide range of flavours and help to achieve great complexity. During fermentation, the skins and juice are stirred on average three times a day by manual brewing. As soon as the fermentation is finished, the wine is transferred immediately to French oak for 11 months. The wine is gently racked, blended and fined with organic egg whites before bottling.
