The properties of older whiskies. - CHAI 2 "la cave de la bergerie": an almost constant temperature and high humidity for long ageing to produce a fine, delicate whisky. - CHAI 3 " Fort Pelissier" at Pont St Vincent // Bainville sur Madon: highest altitude (a magnificent viewpoint).
The aim is to bring our historical heritage back to life. The atmosphere of the vaulted rooms is drier than that of the shepherd's hut. Then the cellar of the sheepfold, gunflint provides a very balanced and supple whisky.
