Bantu Cannonau di Sardegna DOC is a fresh and drinkable red from the Antichi Poderi di Jerzu social cellar, obtained from a selection of Cannonau grapes from the municipal and neighbouring area and aged in really large barrels to preserve all the freshness of the fruit. The grapes from which Bantu is obtained come from approximately twenty years old espalier-trained vineyards with guyot pruning, at about 400 meters above sea level, on calcareous-schist soils facing south-southwest, planting density of about four hundred vines and a maximum yield of one hundred quintals. The harvest takes place in mid-September, when there is an optimal balance in the grapes between acids and sugars; once taken to the cellar, these are destemmed and crushed and the must obtained is left to macerate with the marc for about eight days in steel silos, taking care to perform constant punching down to get the mass moving again and with it the yeasts and pomace. Once the alcoholic fermentation has taken place, the Bantu is left to mature first in steel for ten months and then in large oak vats – no less than two hundred hectoliters! - for six months.
