Vinification details: The grapes are harvested by hand in the vineyards of Valpolicella Classica, starting from the end of September, when the bunches are perfectly ripe, and immediately delivered to the loft. Between 35 and 40% of the total grape production is dedicated to Amarone. From January the dried grapes are de-stemmed and crushed, then transferred to the fermentation vats. Alcoholic fermentation is carried out at a controlled temperature and maceration is managed with the aim of preserving the fruitiness of the grapes alongside an intense but controlled extraction of tannins. The malolactic fermentation takes place partly in small wood and partly in 4000 liter barrels.
