Wash Qilla Excel Basmati Rice thoroughly under cold water until the water runs clear.
Soak the rice for about 20-30 minutes. Drain the water before cooking.
Bring 3 cups of water to a boil in a large pot. Add a pinch of salt and some whole spices (bay leaves, cardamom, cloves, cinnamon).
Add the soaked rice to the boiling water and cook until 70-80% done (the rice should still have a slight bite to it). Drain the water and set the rice aside.
Heat ghee or oil in a large pan. Add the sliced onions and sauté until golden brown.
Add ginger-garlic paste to the pan and cook for a minute.
Add chopped tomatoes and cook until they soften.
Add the meat or vegetables and cook for 5-7 minutes.
Stir in the yogurt, biryani masala, turmeric, red chili powder, and salt. Cook until the meat is fully cooked and the masala has blended well.
In a large, heavy-bottomed pot, spread a layer of cooked rice.
Add a layer of the cooked meat or vegetables on top of the rice.
Repeat the layers until all the rice and meat are used up.
Pour some ghee on top of the final rice layer. Sprinkle with fresh mint and coriander leaves.
Drizzle with lemon juice
Cover the pot with a tight-fitting lid. You can also seal it with dough to trap the steam.
Cook on low heat for about 20-25 minutes (also known as "Dum" cooking).
