Kong Yen Sushi Vinegar is a tasty, sweet sushi rice vinegar. Rice vinegar is made from fermented glutinous rice, also called sweet rice. Sushi vinegar is simply rice vinegar with added sugar and salt for flavor and is ready to use straight away when preparing sushi. The Chinese are known to have been making vinegar for over 4,000 years but the first documentation of rice vinegar comes much later in history from the Chou Dynasty in the 12th century.

Kong Yen Sushi Vinegar is used when cooking sushi rice. It has a combination of rice vinegar, sugar, and salt in that is perfect for sushi rice giving the rice its sweetness.
